This Morning's Cauliflower Harvest


This is the first year we attempted to grow cauliflower. It worked out great. I harvested 5 good sized cauliflowers this morning. We can eat one or 2 now, but the rest will have to be cut & blanched, and then frozen.

Mashed Cauliflower: 1# cauliflower, steamed til very tender, mashed with butter and cream cheese and flavored with salt, pepper, garlic powder and chives is a yummy alternative for mashed potatoes.

Dijon Cauliflower: Steam and entire head of cauliflower then make a paste of dijon mustard, parmesan cheese and a little lemon juice. Rub the paste on the top of the cauliflower and bake until slightly crispy (or you can just toss steamed florets with the paste to coat and call it done).
